Fall is in the air and healthy comfort food is in order.  Make a pot of this nutrient dense stew, perfect for this Fall season.

Vegetable Beef Stew

  • Prep time -5 min.
  • Cook time -120 min.
  • Number of servings- 2
  • Serving size – 1.5 C
  • Difficulty – Easy

 

 

Ingredients:

  • 1 pound Beef for Stew
  • 0.5  tablespoon olive oil
  • 1 cup chopped onions
  • 2 large ribs celery, diced small
  • 1 Tablespoon minced garlic
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 tablespoon chopped rosemary
  • 1 teaspoon sweet paprika
  • 1 bay leaf
  • 0.5 teaspoon ground black pepper
  • 1 cup organic beef stock
  • 1 cup baby carrots
  • 1  15 oz can organic diced tomatoes
  • 1 tablespoon fresh chopped parsley

 

Directions:

  1. Stew can also be prepared in slow cooker/crock pot and ingredients can easily be doubled to make a larger amount
  1. Add oil and cubed beef to soup pot. Cook over medium-high heat, tossing occasionally, until browned, approximately 10 minutes.
  1. Add all other ingredients and allow to cook until vegetables are tender, approximately 1 hour.
